I know but there is a way and as much as it pains me to say this, the hollandaise sauce in an envelope is still pretty good. I resorted to the powdered stuff a while back after an incident where I'd prepared breakfast for my family featuring eggs benedict and scratch made hollandaise sauce and as often happens in my house where a terminally punctual person has inexplicably married a chronically late person, nobody was ready when the food was ready(the late gene must be dominant). By the time people drifted in the sauce had broken and nothing I did could fix it. We had a package of the dried stuff in the pantry and used it and it was actually ok so I keep it on hand to prevent the distress of broken sauce
