A few friends just recently got me into specialty coffee and I've been greatly enjoying it. 
Fortunately, we have a very good roaster in our city and I'm able to acquire very good freshly roasted beans. 
I've been getting superb results with the Hario Switch and having great results with this recipe, below.
I would have never had thought I would be drinking coffee after having been a tea drinker exclusively for the past 35 years. 
It's always nice to find a new thing arise in your life.

Which Hario Switch did you use? V60-02 glass/ceramic, V60-03 glass or the Hario Mugen cone on the Hario Switch base?

I am always on the lookout for a good roaster. Would you mind sharing the roaster you liked?

Rogue Wave Coffee in Edmonton, Alberta, Canada. 
They're really quite knowledgeable, but might be too expensive to order from them, if you're in the US. Not sure though.

Very nice! That is the same Hario Switch I have. I did buy the V60-01 glass dripper and occasionally swap out the cones on the Switch for smaller brews. I also have the Hario Mugen and swapped in that cone with the Switch base and tried some recipes for that combination as well. I really enjoy the Switch. It is my default V60 brewer.

I like the April recipe for the Mugen (below) where you dump in your grinds, fill it up with water and walk away, but I find the cone can be very finicky in setting the filter and frequently wind up with air pockets between the filter and the cone which allow the water to run through the cone quickly bypassing the coffee.

I like Rogue Wave Coffee. I have bought my Timemore B75 brewer from them, but I have not tried any of  their coffee. Their shipping to the US is not expensive. I have also purchased gear from Eight Ounce Coffee as well.  Their shipping was more expensive than Rogue Wave Coffee but they had the items I wanted in stock.

Are there any coffees from Rogue Wave Coffee that you would recommend?

The Aeropress arrived today, and I have had some good success with it, thanks to both James Hoffmann's recipe and some info in the aeropress recipe link you posted! The Hoffmann recipe posted there had grinder settings for many grinders, including my Timemore C2. Well, I had three very good cups of coffee from the three different beans I have! While the cup made is only 2/3 the volume that I make with the V60, they have all were more than palatable to my taste. I am looking forward to experimenting more with it. Right now, I am very happy that beans I had trouble with using the V60 were fine with the Aeropress and tweaking my grind size.

Regarding Rogue Wave's coffee, I think almost everthing they have is great. I have tried them all and don't have a favourite. Depending on which characteristics you like in a bean, you can look at what they have and just get what intrigues you. 
I prefer darker/richer flavours, so that is what I gravitate towards.

I have been gravitating to medium light roasts lately but I also enjoy medium roasts as well.

I have the Vario FLO dripper with seven different filter screens, two of which I had not tried. So today I thought I would try one of those two.
I had heard that one of the screens could be used without a filter so I assumed it had to be the 'Slow 2' screen which is a solid plate with only 8 holes in it.
My original intent was to try this screen with no filter to let the oils through and see what it would taste like. I had not seen any recipes using the Slow 2 screen, so I was going to have to make up the recipe as I went.

Seeing the size of the holes, I was concerned that even with a coarse grind that some coffee would wind up in my cup. So I thought I would use my Flair Pro Dispersion screen as a pre-filter to help reduce the grinds getting into my cup. The idea would be to have the fine hole side of the screen facing up. The screen would rest on the bottom of the dripper (on top of  the Slow 2 screen).

Looking more closely at the screen, it made wonder how a Kalita Wave recipe would work with the Slow 2 screen with a filter (without Flair Pro Dispersion screen). The holes were smaller than my glass Kalita 155 but there were were more holes than the Kalita 155 (which has only 3 holes). So I thought I would try a Kalita 155 recipe with this setup and see what would happen. I decided to go with the Project Barista 155 recipe and use the same water temperature and grind size as I would for that recipe (using the Jim's Organic Coffee (West Wareham, MA) - Papua New Guinea (Korofrigu) beans). I had a less than two minute draw down and the coffee had the best taste/mouth feel I have encountered with these beans for any brew method I have tried so far.

I think I need to revisit some of the other screen I have tried and use a two-pour recipe (like the Project Barista 155 recipe) and taste the results. I think my previous brews with some of the screens generated bitter brews, but they were using more pours.

I did not see this information until after I had brewed my coffee this morning, but I doubt it would have changed my brewing settings.

I may still try the Slow 2 screen with the Flair Pro Dispersion screen and without a filter in the future, but for now, I will try the last screen I have not tried (Slow 3) and then circle back to the other screens using the same recipe.

I ran across a helpful tip watching this video from April Coffee.
Though the video is about their two filter sizes, they gave a great tip to even out basket style filters (like Kalita Wave, April, Timemore basket filters, etc.) which typically get stacked in sets which leads to the inner set being more narrow than the outer sets.

To even that out, take half the filters and swap the order putting the bottom/outer ones inside the top/inner ones so the inner ones stretch out by the time you get to them.
