So far, I like titanium versions of the same razor in stainless. Timeless, and Carbon.

Maybe. I know I'm going to get a ton of requests for the 101mm and the OC. But the reality is that very few people actually buy these options despite the vocal minority who love them. Shane, I am assuming that the SS OC Base Plate will work with the Ti Top Cap and Ti Handle (??)
THAT would be a reasonable solution/alternative to those that want a OC version of the Ti Blackbird.

Do you know what the approximate weight difference would be between the SS Top Caps and Base Plates VS. the Ti versions?

Correct. You can swap plates as you'd like to. I've done this and it's a cool mid-weight option. Nearly impossible to visually tell that you've mixed metals.

Weights rounded to the half gram:

Ti Cap: 8g
SS Cap: 15g

Ti SB plate: 12.5g
SS SB plate: 22.5g
SS OC plate: 24g

Ti handle: 33.5g
SS handle: 59g

Ti Stand: 66.5g
SS stand: 117.5g
