I finally decided to start milling my own flour and buying my own wheat berries, so I ended up with a Komo Classic. I had the Komo XL on backorder but delivery was pushed back until late summer.
I had to start all over as there's a learning curve when baking bread, especially sourdough, with home milled flour. It doesn't rise as much due to less gluten and other variables. You'll still get the biggest, badass looking crumb when using store bought flour but the benefits of milling your own wheat berries allows you to capture the nutrients in the bran and germ. You also get to enjoy the benefit of the vitamins, minerals, antioxidants and other nutrients that are released from the kernel by milling.
