Seems like I just finished with the maple syrup and the grocery store went and threw strawberries on sale.
I purchased 8 pounds and we made strawberry jam


I cut up the strawberries and my daughter feeds them into our food mill attachment mounted on the stand mixer.

This is our rig. The good pulp collects in the pot in the middle. The hulls and leaves collect in the bowl and end up in our compost bin.

To the pulp we add 5  pounds of sugar (I hate that it now comes in 4 pound bags).  I do not use pectin so the sugar acts as the thickener.

Amy stirs it often to prevent scorching. She's a good kid.

Once it is thick enough we "can" it into glass jars. The jam is on the right front. The boiling water bath is in the back. Lids and rings are in the pan on the left front. I use the ladel and funnel to the right to transfer the jam.

Once the lids are applied I use a jar carrier to lower into the water bath.

Canning is easier with 2 people. Between taking pics my wife was helping. Here she checks on the boil status of the water bath and filled jars.

When all finished we had 6 pints from the 8 pounds of berries and 5 pounds of sugar.

That should last us until next spring I am hoping. My wife uses it on Belgian waffles.

All kidding aside, I really enjoy your "tours", be they cooking, lake views, clearing snow (my favorite part of that is getting to watch it from San Diego Big Grin ), showing off fountain pens and their accoutrements, etc. Happy2

Sometimes I think I monopolize bandwidth by posting pics all the time. But I guess this is not much different than SOTD photos. Smile
