A few years ago I joined a veggie coop.  Every Thursday a bushel box showed up on my doorstep with a healthy portion of that weeks harvest.  I have a lodge cast iron grill, awesome little grill.  Just about anything that showed up in that box got sliced, tossed in olive oil and salt/pepper then thrown on the grill.  Made for awesome sides for every meal.  Peppers, potatoes, tomatoes, squash, eggplant, you name it, we grilled it.

You're making me hungry. I just love yellow squash and zucchini on the grill.

A friend of mine takes vidalia sweet onions, skins them, cuts the center out, puts some butter and a beef bullion cube in the center and wraps them up in foil and pops them on the grill when he throws the corn on the grill. The onions are amazing with a steak.

That sounds awesome!  I may have to give that a try.  

Here's an awesome way to make potatoes on the grill.  Try it and you'll never want them any other way.  

Cube up some potatoes and onions.  Put a portions worth on a square of foil with some onion.  Put a couple tablespoon pats of butter on top.  Sprinkle some kosher salt, pepper and paprika  on the pile.  Then put a splash of heavy cream over the mix.  Roll the packet into a bundle and throw on the grill for 30-45 minutes.  They are so good this way.

No pix, but I use a veggie "basket" for salmon. Of course it's just as handy for veggies. I've only used it for veggies a few times though. Certainly fewer than 5 times. Mostly when they get grilled they get cut large and put on across the grates. A veggie basket can be used on pretty much every grill. I found mine in the gasser section of K-Mart.

I love summer grill season! At our place we prefer hardwood charcoal. So far I've done baked potatoes and onions .... but the favorite is zuchinni & yellow squash sliced length wise and marinated in olive oil, garlic and Greek seasoning. Been prone to do some portabello's also!

I have this stainless basket from Weber that works great with all sorts of veggies. My wife loves when I chop up a vidalia, mix it with some baby bellas, olive oil, salt and pepper and then shortly before its done a few drizzles of bourbon.
