Sir Henry's uses real rum in Island Estate. He wouldn't have it any other way.

That’s absolutely correct you can’t make real Bay Rum without either using and infusing the actual leaves of the plant or the Pimenta Racmosa Essential Oil. Synthetic Bay Rum Fragrance oils or Bay Rum Aroma Chemicals creates a totally different Bay Rum if you can call it that. I have also seen a couple use Bay Laurel which is what we use to cook with and I can tell you the difference between Bay Laurel Essential Oil as Pimenta Racemosa are not even close. I actually for the heck of it ordered a live plant and unfortunately it was in the winter months so it didn’t last long in the house by a sunny window which I was hoping for but when you take a leaf and break it or rub it you can smell the foundation of what Bay Rum smells like. Gonna give it another try this spring when the weather warms up. I’m curious to see if and how it matures.
