I think for people that shave every day, or every few days with little hair growth on the face an adjustable razor serves little purpose. Most could get away with a mild razor and 1 or 2 passes on the face.
I like to keep a light stubble most of the time which I maintain with an electric razor, so my hair growth is fairly heavy whenever I do shave, so for that reason I like an adjustable razor which lets me dial up the aggression on the 1st pass to remove the bulk of hair, then as I get closer to BBS, use a milder setting for ATG.

I am a big fan of adjustables, both DE and SE. I appreciate the ability to adjust the blade exposure, more efficient for longer growth and less for day to day shaves. I don't tend to change the setting between passes so I suppose I use them more like a fixed blade razor. Here are some of my favorites.

I have sold all my single gap razors and only keep two adjustables in play.
The Sailor and the Taiga Ti. Pretty soon I may be down to just one.
But both are thoroughly enjoyable.
For some reason I prefer the Sailor on 2 as it delivers the goods every time.
While the Taiga seems to thrive on higher settings like 4 or 5. Taiga is also
quite finicky about blades in my experience. I get great shaves with a Gillette
platinum while the wizamets only turn on the magic after shave 2.
