Does anyone know what the 'A' printed on the head stands for, and what its purpose is?

It stands for "Adjustable".  It is abbreviated to just simply "A" because of the reduced form factor of the '21 model.  Here is the '20 with the full writing:

Living on the edge
(This post was last modified: 11-25-2021, 07:25 PM by Tester28.)
Today I dialled it up to 8 for a north-south pass on face and south north on the neck.
These are my WTG areas.

Hyper Efficient for sure, but pronounced blade feel and, while there was not an absence of comfort, there was
not a preponderance of it either...diminishing returns for me. Yet, not a nick was felt, and no blood. Remarkable.

Went back to a 4 for ATG and a 2 for XTG on the neck...pretty close to perfect.

For me, there is no reason to go beyond the manufacturers 1-5 but its always good to have some leeway
to play around if bored.

Gotta try turning it up to eleven though. Even if it’s just one time.

I have not been over 4 yet on the 2020 and am happy so far to not venture farther.  But I am tempted to try it once at the higher settings just to see if I walk away unscathed.
