I agree. Besides honing differences, the blades vary in both width (edge to back) and thickness, which allows you to vary both gap and exposure. Some even have tiny stainless guard wires wrapped around the edge. Granted, the progression from mild to wild is not well documented, and some people confuse exposure and sharpness.

One thing that’s missing is the ability to adjust on the fly (between a sensitive upper lip and tough-as-barbed wire neck, for example).

The Ikon El Jefe uses AC Blades.
It was not designed to be adjustable but they made the blade posts too small and as a result it is somewhat adjustable.

Other SE adjustables that I know of although none take AC blades - Penn, Krytyk.
Nobody has mentioned the Pal injector.

The Supply Single Edge Pro is an adjustable injector single edge razor. It shouldn't be that difficult to offer it in an AC form factor?
I know it's an injector razor. But I would say it is just a comfortable option to reload/load a razor not a must have. The Asylum injector razor isn't a real injector razor. This one use just the short AC blades.

This has been accomplished with GEM razor, as an experimental razor, by Tom White, in the year 2017 (at least 2017 was the year he actually displayed it and the actual year it was fabricated might be earlier). I was part of a pass around and reviewed the razor. Tom never put it into production, but was open, at the time, to someone else doing so. Tom named the razor "Igor". Below are some photographs:

I'm guessing that most adjustable razors depend on using a thin flexible blade to control blade exposure and/or gap, by pushing it up in the middle. 
SE blades tend to be rigid.

The Futur (and Progress?) style razors keep the same flex at all settings, but the blade gap changes.
(this is the only photo I have that might illustrate how they adjust, with a QShave clone)
The cap (absent here) floats up or down with the centre part, but the flex does not change.
