This is what I don't get: why does it cost hundreds of dollars to make this exact same razor today?

Still remember not to long ago but in the past now, the 3D printed razor craze. Still a great shaver they are !

The expensive artisan razors aren't remotely related other than holding a DE blade; whether such quality razors are required is a different matter.

I honestly would like to know how are they different from this old TTO (?) adjustable Gillette? I have used an old Gillette TTO many decades ago so I am familiar with them but I have only seen pictures and reviews of the modern adjustable DE's.
