For dinner this evening we had penne pasta with chicken, spinach, sun-dried tomatoes, chives, and a Greek yogurt-cream cheese-parmesan sauce.

Tonight it was a "Buddha Bowl" of roasted yams, chickpeas, spinach, red onion, and broccoli, with a lemon garlic tahini sauce.

OK, Those "yams" look suspiciously like sweet potatoes and not yams. Yams have white flesh and are grown 1/2 way around the globe and not here.

But it looks good.

This evening we had another Buddha Bowl dinner, this one Hawaiian, with chicken, peppers, sweet potato, pineapple, and avocado, topped with a spicy tomato sauce, over a bed of rice and spinach.  Quite good.

This evening I, for our TV snack, I made cashew clusters, with just roasted cashews and slightly spicy, bittersweet Mexican chocolate. Delicious, and very easy to eat too many.
