One of the problems with salmon is its often badly cooked, ie, overcooked and then becomes dry and flaky and not my favourite.  I really enjoy it raw in sashimi form, especially sockeye.  cubed in a poke bowl is good too.  I love it smoked and as for cooking, the sous vide method is THE METHOD for cooking fish so it turns out moist and tender.  Delicious.

The only time I've enjoyed smoked fish was smoked whitefish, heated over a wood fire on the shores of the Mackenzie River Delta.
The ambience certainly helped.

OK, now you are making me hungry! My wife was a big fan of Duck Trap smoked salmon. Very pricey in the grocery, and I think Duck Trap sold their name to some Big Food provider. Anyway, is this similar or something different? I Google it later, but what you're describing sounds like the stuff we use for bagels and cream cheese.

Same stuff except homemade is soooo much less expensive. I like it smoked or sans smoke. But when I smoke it, and that's most batches, I use cherry wood for the cold smoke. Delicious stuff. I buy a fillet or 2 when Hannaford has it on sale. I'm surprised I didn't buy any a week or so ago but I'm not happy with my keto bread so I wouldn't have a good place to pile it on at this time.

The pup is doing fine. She's definitely my dog. She follows me around, listens to me, and minds me, except for the things that are hard wired in to her terrier mind. The wife has problems with her. She either wants a robot or a clone of the dog she replaced, I don't know which. But she's clearly her own personality as all dogs are. The other old guy isn't doing good at all. We've gotten him months extra by giving him painkillers for the arthritis, but now he's losing control of his rear legs. The plan is to call the vet tomorrow. He's been a good dog and the way he is right now isn't fair to him to keep him around for us. He clearly is in distress. Last time we didn't allow him to see his "sisters" body to get some closure and he kept looking for her, then he went into depression. This time I'm going to give the pup time to come to grips with the corpse. Soon after, the search will start for a smallish brother for her. We can't have just one dog, they need companionship.

Back to the pup... We recently had her spayed and the vet and staff all love her. Last time one wanted to kidnap her. This time more comments were made. One stated that she's "the perfect size". The vet likes that her tail is always wagging out of joy. She's easy to like and she's very friendly and definitely loves people, maybe too much. But she barks and that's really all we want. She has really good hearing and I've come to trust it.

She also plays good all by herself. My brother has a terrier breed and he calls it the "zoomies". Not every night but frequently she'll pick on a toy and act like it's alive. Throwing it and chasing it, losing it and running back to find it and pounce. This goes on at high speed for 5-10 minutes. She's alot of fun to have around.

Thanks for the info and the updates, Brian. My heart goes out to regarding the older guy. I think you plan is good, and hopefully will help. But the loss is there, too. I know you've gone through this before, but still my best to you at this ending time approaches.
