I just watched a guy on the tube use leather on top of his stone, he said something that made me think. When you strop with a hanging strop you run the risk of actually rounding the edge instead of the edge keeping the VA shape. Any thoughts on this?

Leather is much softer than steel.
That said,if you let your linen and leather slack it is possible to fold the very edge over and ruin it . however normal stropping on unpasted strops will not dull the edge.instead if done well it realigns the edge and burnishes it.
