One change I made to the lemon rollup filling is to add 1/2 tsp of pure lemon oil intended for food (not for cleaning).

I wanted lemon zest, but I never know when we're in town what I'll be cooking and I really hate having things (like a lemon) go bad. So what's the solution? I tried dry zest, but tasted it when it arrived and it was just nasty and brown. Yuck! Then I looked to see if lemon oil for food existed as a thing. Yup, found it. It rounded out the lemon flavor of the spread and made it "right".

I'll fix the recipe above.

edit: When making and tasting this as I went along I thought it might make a decent pancake topper. Tried that today, and yes, it's a keeper. I far prefer real maple syrup, but that's a no-no in ketosis. Hmmm, maybe neufchatel and maple flavor as a spread?

Already posted is the sweet lemon spread. Make the following the same way, only the ingredients change.

Bananas are back on the menu folks! Well, sort of.    Wink

Sweet Banana Spread

No searching for flavor with this. Delicious!

Ingredients:
8oz Neufchatel (the lower fat option) or Cream Cheese (the high fat option)
2 ½ tsps LORANN Pro’ Kitchen Banana bakery emulsion (start with 1 tsp and increase by 1/2 tsps to reach your desired flavor, mixing fully between additions)
1 tsp LORANN Pro’ Kitchen Butter/vanilla bakery emulsion
6 level scoops dry monk fruit extract powder (the scoop comes in the envelope with the monk fruit)
Low carb whole wheat tortilla

Follow instructions for the lemon spread.

I am quite specific re: the flavors. Emulsions generally have a better taste than extracts hence the specificity. I get the specified emulsions from Amazon.

Big Grin Hah! Can one gain weight in ketosis? Yes! I stayed in ketosis and gained 10 pounds over time. But I now know how to cook really good low/no carb food that I like to eat. And I like food. I didn't over indulge, or so I thought. But I knew I was gaining inches. So I'm back to one meal a day. Not as satisfying as far as eating, but being in ketosis, eating, and maintaining weight is new to me. A Ketosis diet is a so much more "efficient" way to eat. The oils/fats just pack more calories. So I'm back to one meal a day. Not as much fun, but I'm losing again. Maybe this time I'll reach my 165# goal, or not. As long as I'm 180 or below I'll be happy. 160 is doable and maybe I'll decide to get there this time.

FWIW, the reason I wanted slow weight loss was to understand and be able to control my weight rather than to gain the weight back and wonder why. I've never been happier that I chose slow weight loss as I am today. My tastebuds miss the extra meal, but my body doesn't.

FWIW #2: My GI Dr told me to take a good multivitamin (which I have been doing right along for years since beginning on keto), and I also take an additional B complex, D3, K2 mk 7, 1g C, and calcium citrate as well as an additional orange flavored fiber drink 2x a day.

What K2 vitamin brother?

K2 mk7. It's only role in the body is to keep calcium in the bones and out of the arteries. It does nothing for clotting or anything else. The D3 is specifically an anti-viral. No other D does that only D3. Calcium Citrate? Other calciums are less expensive but also don't get absorbed so why take them?

Keto pancakes are generally the pits. They are either too eggy tasting (along with substitute keto breads), or just don't act like pancakes as they cook. Then there is the maple syrup which is easier to find an acceptable one even though having nothing in common with any maple tree. But as I continue to search for substitutes, these are so far by far the best.

Wholesome Yum pancake mix acts like a pancake in the pan, and also actually tastes like a pancake. Maybe if I could turn my tastebuds back 3 years to when I could eat a real pancake I'd have a different take on them. But right now these are the best so far*. They also have a maple syrup that I rate as being right up there. It's not the real deal, but it's really good for being 100% fake. But that's keto and trying to find food that mimics what we ate in the past.

I have tried their bread mix made as biscuits and had nothing but positive thoughts but I didn't take notes. It did spur me to try making my own bread recipe but it didn't turn out as good as their mix. I bought another package for me to taste and try to duplicate from my ingredients.

* I've tried Birchbenders and they act nothing like a real pancake in the pan or on the plate but the taste is OK. CarbQuik makes a better pancake, but it has an "off" flavor. But it's more pancake like and with a non-traditional topping they are acceptable (sweet lemon cream cheese spread). I haven't tried them yet with the Wholesome Yum maple syrup.

I've been doing keto again for the past 2-3 months. But a high protein version Smile
Daily calorie aim: 35% protein, 60% fat, 5% carbs
Working out muscles and going on walks, hikes, bike rides as much as I can.and resting enough in between.
Down to within about 4 pounds of my high school weight. I'll get there and surpass it in the next couple weeks.
I feel GREAT. I'm stronger, leaner, and feel ready for anything.

Neroli! Yes, a good regimen and lifestyle. Americans eat like shit, Eat shit, and Pharma gets rich. I fast 2 days a week, and eat one meal a day. At my college weight. I stay away from white stuff [sugar, bread, pasta, taters, rice,] and all processed foods. Seed oils are baaad. Been of use for 20 years. Eggs, nuts, fish, beef, pork and avocados are my staples
