I don't remember any numbers of temperature or how long dehydration time off hand. We just usually check it try to get the consistency we want, chewy or crunchy.

Same here.  I run temp at 125F and just check occasionally but it seems about 10 hrs.

This was my first attempt with cantaloupe and it was an interesting surprise.  The sweetness is there but the consistency is quite chewy, almost like a gummy bear.  It makes for a very nice snack when I'm in the mood for something sweet.  The fact that nothing else is added, such as extra sweeteners or preservatives, is a huge plus.

Canned sliced peaches drained, blotted dry, and dehydrated.  Nothing else added.  They came out sweet and chewy.

I am still munching on the dried cantaloupe and peaches and really enjoying them.  I love not having to worry about the fruit spoiling after a few days.

Today, I decided to do something else with those two dried fruits.  I like the trail mix that has nuts, fruit (often raisins) and M&M type candies all mixed together.  However, I prefer most nuts raw and unsalted so I decided to make my own trail mix of this type.  I diced some of the deyhdrated peaches and cantaloupe and added raw pistachios, raw cashews, and Trader Joe's version of M&Ms.  I mixed them together and will try them tonight as a snack while watching a bit of television.

How long do you dehydrate peaches for? Do you set the same time as for pineapple? I haven't try it yet, but looks so delicious. I think that it is just perfect for breakfast. Usually I have quinoa porridge with banana and dehydrated fruits, so dehydrated peaches will go well with it. After my gastric sleeve surgery I started to pay more attention to what I eat, therefore I'm thankful to lolacovington.com, for always inspiring me to cook healthy. Anyway, have you ever tried to dehydrate tomatoes? This is one of the tastiest snacks! You should definitely try it!

I have only done canned sliced peaches.  After blotting the excess juice off of them, I dehydrate them for about 12 hours, checking periodically.  Because the peaches are not necessarily uniformly sliced, some may get done faster than others.  Note that I also lightly spray the racks with a bit of oil to help prevent sticking.
