I did get one of the A-Maze-N  pellet trays, I need to experiment with some different pellets for that but I feel like it generates more consistent smoke than chips in the smoke box being warmed by the heating element.

What is the mailbox mod? How long do the pellets last? I usually refill the wood chips every 30-45 minutes. It would be nice to not have to go out there so much.

I had an electric Masterbuilt briefly, but was never really satisfied with it. Moved on to a Bubba Keg (like a double steel-walled Big Green Egg) and got along great with it for a few years. Currently have a pellet smoker, which has been the best for me. But however you smoke meat is good. Smile

Brisket is my favorite, but pulled pork and ribs are always good too. I'm thinking I might need to try a beef shoulder clod one of these days.

Mailbox mod is basically running tubing/ducting from the smoker and connecting it to a standard mailbox (requires cutting a hole in the side of the smoker to run the tubing out). The mailbox then acts as an external smoke box to house your chips/pellets/etc, smile is piped through the tubing and you’re then just using the smoker itself for the heating element. Allows for cold smokes, and you don’t have to worry about the usually-subpar heating element of the smoker actually getting your chips/pellets going.
My AMazeN tray will run 3-4 hours if it’s filled all the way up. Definitely lightens the load from refilling chip trays constantly.

I don’t want to drill a hole in my smoker, but I might get one of those pellet trays. I’ve been up since 4:30 smoking 2 pork shoulders. It would have been nice to put some pellets in the tray and go back to sleep.

Update:Still using my electric smoker,but recently upgraded to a Pit Boss 820D pellet smoker.We have grilled burgers,steaks etc. so far and all have turned out amazing.Going against my better judgement and going to see how she does as a smoker today,on the menu is a couple racks of ribs,chicken breasts and some stuffed jalapeno's(ABT's)Figured just play it simple until I get over the learning curve with the new grill.
