We celebrated my daughter's birthday on Saturday.
The menu was of her choosing.

Bacon wrapped pork center loin roast.
I cook this at a low 250F for an hour to cook the roast. Then with the roast in the oven I up the temp to 475F. I cook it for an additional 30 minutes to crisp the bacon.

The sides were mashed potaotes and broccoli florets in a 3 cheese sauce. For special meals I like to use a ring mold for the potatoes. I think it makes a nice presentation.
My ring mold is actually a single serving pineapple can with both ends cut out Smile

Dessert was her favorite - triple chocolate mousse.
