A year or so ago my wife bought a cooking gadget called "Emeril's Cake and Pie Maker" It opens up like a waffle maker and has 4 molds in it for making cup cakes, quiches, or tiny pies. My wife made the quiches and pies and they came out good. Lately I've been using it to make cup cakes. I'm not a baker by any means so this is right up my alley. All you do is mix up one of the boxed cake mixes they sell and then cook up a bunch of cup cakes in Emeril's contraption. One cake mix makes between 18 and 24 little cakes. I get a bunch of small freezer bags and put 4 cakes in each. I freeze them and take them out a bag at a time as we want them. I top them with whipped cream or ice cream. Sure beats spending 8 or 9 bucks on a cake that goes stale before we can finish it.
