I ended up finding a chicken kabob recipe that the whole family has fallen in love with. Last night was the 3rd time i've made it in the past week or so and it's really easy to make. Slice the chicken, douse it with olive oil, add salt and a little bit of paprika, and then add a little soy sauce. No need for it to marinate but I usually let it sit in the mixture for a few minutes while i get everything else ready. I also decided to try some grilled pineapple. It went really well with the chicken
Saw a YouTube video on smoked Stuffed Peppers the other day which i always enjoyed growing up. I don't think I had had one in over twenty years though. The wife wasn't too thrilled with the idea but ended up really enjoying it. Next time, I'll try a Tex-Mex smoked pepper using poblano instead of bell peppers

Jason, those look delicious. I haven't had a stuffed pepper or stuffed tomato in years and I'm not sure why as I really like them. Glad your wife likes them, too.

Thanks Freddy! I've never had a stuffed tomato but my wife LOVES tomatos. Any good tips for tomato stuffings? If I can make those as a surprise for her, she may actually fall in love me all over again

Honestly, I have never made them, just eaten them. (I'm really good at that. )

By the way, I agree with your wife; I love tomatoes. In fact, I always nosh on one or two small ones (such as cherry or compari tomates) while waiting for dinner to finish cooking.
